Homemade Blackberry Wine
Blackberry wine is full-bodied with deep color and rich, jammy flavor. Use fully ripe berries for best sweetness.
Ingredients
- 4 lbs blackberries
- 2 lbs sugar
- 1 tsp pectic enzyme
- 1 tsp yeast nutrient
- 1 packet wine yeast
- Water to 1 gallon
Method
Crush blackberries in primary. Add warm water and sugar. Stir to dissolve. Add pectic enzyme and wait 12 hours. Add yeast nutrient and pitch yeast. Ferment 7-10 days with daily punch-downs. Strain and rack to secondary. Age 4-6 months. Blackberry wine improves with time.
