Making wine at home is rewarding, but mistakes can ruin batches. Here are the most common mistakes and how to avoid them.
1. Poor Sanitation
The #1 cause of wine problems. Always sanitize everything that touches your wine. Use Star San or metabisulfite.
2. Using Table Grapes
Table grapes lack the tannins, acidity, and sugars needed for good wine. Use wine grapes or appropriate fruit wine ingredients.
3. Ignoring Temperature
Fermentation that's too warm produces off-flavors. Keep fermentation between 65-75°F (18-24°C).
4. Not Using Yeast Nutrients
Yeast need nutrients to ferment properly. Without them, fermentation can stall or produce sulfur smells.
5. Rushing Fermentation
Patience is key. Let fermentation complete naturally. Rushing leads to unstable wine.
6. Too Much or Too Little Sulfite
Sulfites protect wine but too much tastes harsh. Follow recommended doses (1 Campden tablet per gallon).
7. Exposing to Oxygen
While some oxygen helps aging, too much turns wine into vinegar. Keep airlocks in place.
